METHOD
- Scale ingredients accurately, have all ingredients at room temperature.
- Combine all the dry ingredients, with your mixer on low to medium speed.
- Slowly add the fat and mix until a cohesive dough forms.
- The dough should be able to hold its shape when your roll into a ball.
- Roll into 30g balls, flatten and press an almond into the dough.
- Glaze with egg yolk.
- (160°C) approximately 12 to 14 mins.
